Fish On A Stick

This fish kabob recipe is easy to make, delicious, super healthy, and great for parties.

Ingredients:
1/2 lb salmon
1/2 lb mahi mahi
1/2 lb tuna
1/2 lb raw shrimp
1 tsp himalayan salt
1 tsp black pepper
1 tsp cumin
1 tsp paprika
1 tsp cayenne pepper
2 tbsp ketchup
1/2 cup olive oil
1 large lemon juiced
1 lime juiced
1 bunch cilantro (chopped)
1 large onion (cut into 1" slices)
1 yellow pepper (cut into 1" slices)
1 red pepper (cut into 1" slices)
1 cup baby carrots
barbecue sticks

Directions:
1. create the marinade by combining all the spices, the olive oil, the lemon, the lime, the chopped cilantro, the ketchup and set aside
2. cut all the fish into 2" cubes and place in the marinade with the carrots. Cover and refrigerate for at least 2 hours
2. Using damp barbecue sticks (double them up so they won't break) arrange the fish, the onions, and the peppers as desired
3. Either grill or preheat the oven to 350
4. bake uncovered for 30 min (place the carrots in the same tray)
5. broil for 5 min
6. serve on a bed of rice and garnish with the carrots as shown
