Banana Bites

A healthy dessert is a treat. My banana bites are the healthy version of fried bananas. They are gluten free yet will satisfy your cravings for sweets. Super easy and fast to make. Hope you enjoy them :)

Ingredients:
2 bananas (not too ripe) cut in 1/4" slices
1 egg
1/2 cup amaranth flour
1 orange zest
1 orange juiced
pinch of salt
1/2 tsp baking powder
spray on coconut oil
cinnamon powder (optional)

Directions:
1. Blend the egg real well in a blender
2. Add the zest, the salt, and blend again
3. slowly add the flour and the baking soda and blend some more
4. add the orange juice until you get the mixture to a cake mix consistency
5. get a cupcake tray (the smallest size you can find)
6. spray it with coconut oil
7. add 1 tsp of the mixture to each cup then place one banana slice in each cup then cover with another 1 tsp of the mixture in each cup
8. preheat the oven to 400 and bake for about 10-15 min or until golden
9. broil for a few minutes
10. arrange in a serving plate and sprinkle with cinnamon
