This is a typical Syrian inspired soup that is usually made during Ramadan (the fasting month) for it's full nutritional benefits. One cup of this lentil soup is packed with protein, vitamins, fiber, and minerals without compromising on the taste.

Ingredients:
1/2 cup brown whole lentils (washed in a strainer)
1/2 bunch celery sticks (chopped)
5 organic carrots (chopped)
1/2 cup quinoa pasta (i get the smallest kind I can find)
1 bunch green onions (chopped)
1 small pre washed spinach bag (chopped)
1 large lemon (juiced)
4 tbsp Olive Oil
1 tsp salt, 1 tsp black pepper, 2 tsp cumin

Directions:
1. place the lentils in a medium size pan with 8 cups of water. Bring to a boil and cook on medium heat for10 min
2. add the celery and the carrots and continue cooking for another 10 min
3.add the green onions, the spinach, the spices, and the lemon and cook for 5 min.
4. turn off the heat and add the olive oil
serve hot..
