Beef Tarragano

I have been 80% dairy free for about a year now, and what a difference it has made for me. My exception when it comes to dairy is yogurt. The fact that it is rich in probiotics makes it hard to abandon totally. Still I don't eat it on a daily basis, but every now and then I like to add it to my recipes.

Ingredients:
1 lb beef tenderloin cut in 1.2" cubes
1 small onion diced
1 box fresh tarragon (from the herbs area in any supermarket)
1 quart plain yogurt or greek yogurt
1 whole egg
1tbsp corn starch
spices: 2tsp salt, 2 tsp black pepper, 1 tsp white pepper (optional), 1 tsp paprika, 1 tsp cinnamon
,1 tsp cumin
4 tbsp olive oil

Directions:
1.place the oil, the meat, the onions, the spices (except the white pepper) in a pan and sear on high heat for 5-10min.
2.add 3 cups of water, bring to a boil, cover and cook on medium heat for 30 min
3. strain the meat leaving 1/2 cup of the broth
3. place the egg, the starch, and the yogurt in a blender for 5 minute or until you get a clump free mixture
4. Place the mixture in a clean dry pan and bring to a boil on medium heat uncovered (covering the yogurt will make it clumpy) stirring occasionally
5. add the white pepper, the tarragon, the meat and the broth
6. bring to another boil and cook for 5 minutes
7. serve hot with a side of white rice
