Meat Balls Flamme

I blogged earlier about how meat is widely misunderstood. I think if it is consumed in moderation and combined with vegetables it should do your body good. Stay away though from any processed meats. If you are craving meat balls you will love this healthy recipe.

Ingredients:
1 lb ground beef
1 cup chopped parsley
1 cup chopped onions
1tsp himalayan salt (divided)
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp curry powder
1 tsp cardamon (freshly grounded)
2 large ripe tomatoes (peeled)
1/2 cup colored peppers (chopped)
8 small chipotle onions (peeled)
8 small gourmet potatoes, any shape you like (peeled)
1 tsp hot pepper paste

Directions:
1. Mix the ground beef with half the salt, the black pepper, the paprika, the curry, the chopped onions, the chopped parsley.
2. Using a table spoon get even amount of the mixture and make them into small balls. Set aside
3. In a medium size pan place the tomatoes with 1 cup water and bring to a boil, then cook on medium heat for 10 minutes
4. Using a hand blender, puree the tomatoes.
5. Add the cardamon, the salt, the pepper paste, and cook for 5 more minutes
6. Add the peppers and turn off the heat.
7. Preheat the oven to 350
8. In a deep oven tray place the meat balls, the onions, the potatoes (alternating between the three)
9. Pour the tomato mixture over it. Cover with foil and bake for about 15 minutes
10. Serve hot alone or with a side of rice or pasta
