Sweet Bites

My treat to you this Memorial Day is a super healthy dessert. My Sweet Bites come with zero guilt and satisfy your taste buds to the max. Packed with vitamins, minerals, and omega-3 these Memorial Day Sweet Bites are a must for all the fashionistas out there. Dessert has never gotten any healthier :)

Ingredients:
20 Medjool dates (pitted. It takes 5 minutes to take the core out)
1/2 cup coconut oil
2 tsp Anise seed (ground, I use the coffee grinder)
2 tsp Cinnamon
2 tsp Nutmeg (grated)
1/2 cup raw Walnuts (ground)
1/2 cup raw pistachio (ground)
1/2 cup unsweetened coconut (finely shredded)

Directions:
1. Microwave the dates for 20 seconds
2. Place the dates in a food processor and add the coconut, anise seed, nutmeg, cinnamon, and blend until smooth
3. Place the walnuts, the pistachio, the shredded coconut in three separate small bowls
4. Using the smallest ice-cream scoop make even balls of the dates mixture (the spoon will help you get even amounts, then roll in your palms to get perfect balls
5. Dip each ball in either the ground walnuts, the pistachios, or the flakes.
6. Alternate to get the effect in the picture above
