Cocky Pie

You crave dessert but you are on a diet, you have a sweet tooth but you are worried about the calories, you love sweets but your healthy lifestyle doesn't allow them. Well here is my treat to all of you healthy addicts out there; a supper healthy apple pie to satisfy your cravings.

In all my dessert recipes I avoid using processed sugar. I do not add any kind of sugar, but I incorporate elements that are naturally sweet and do your body good. You don't have to worry about calories when consuming these desserts bc the body doesn't have to spend much energy breaking down natural sugars. Here is my healthy labor day apple pie recipe that is

Sugarfree, Glutenfree, dairy free, vegan

Ingredients:
Pie Crust:
2 cups walnuts
8 Medjool Dates pitted
1/4 cup Amaranth flour
1/4 cup water
1/4 tsp himalayan salt

Filling:
3 medium size apples peeled, seeded, and cut in thin slices
1tbsp apple vinegar
1 tbsp coconut oil
1/2 lemon zest and juice
1 tsp nutmeg
1 tsp cinnamon

Directions:
1. place the walnut in a food processor and mince them finely
2. add the dates, the water, the flour and the salt and pulse it till you have a consistent dough
3. Spread the dough evenly in a 6" round deep pie dish. Set it aside
4. Place all the filling ingredients in a pyrex container and mix well
5. Preheat the oven to 350 and back th dapple filling for 30 min
6. Let the mixture cool a bit then place it over the dough and bake for 15 min
