Ingredients:
12 oz portabello mushrooms (diced)
1 chicken breast (diced)
1 onion (diced)
2 shallots (diced)
1 hungarian pepper (cored and diced)
1 jalapeño pepper (cored and diced)
1 orange pepper (cored and diced)
2 large tomatoes (diced)
4 tbsp grape seed oil
2 tbsp olive oil
1/2 lemon juiced
1 tsp white vinegar
1 tsp himalayan salt
1 tsp black pepper
1 tsp paprika
1/2 tsp cumin
1.2 tsp cardamon
1/2 tsp cinnamon
1 bunch cilantro chopped

Directions:
1. In a deep skillet place the grape seed oil, the chicken, the onion, and all the spices and cook on high heat for about 5 min
2. Add the tomatoes, the mushrooms, the peppers, the vinegar, and the shallots. Bring to a boil then cook on low heat for 5 minutes
3. Add the lemon, the cilantro, the olive oil and turn off the heat
4. Serve hot alone or with a side of rice or quinoa
