Chicken Medley

Merry Christmas everyone. It's the happiest time of the year where family fathers for a nice meal. My gift to all of you this holiday is this very yummi, very healthy, very exotic recipe that I learned from a friend of mine. Enjoy!

GLUTEN FREE, DAIRY FREE

Ingredients:
1 cup white basmati rice
1 whole organic hen (cut in pieces)
1 cup thinly diced tomato
1 cup thinly diced colored peppers
1/2 cup thinly diced carrots
1 onion cut in wings
2 tbsp olive oil
2 fresh tumeric root peeled
2 tsp himalayan slat, 1tsp black pepper, 1tsp paprika, 1/4 tsp cardmeon, pich cayan pepper
1 cup raw shredded almonds
​2 tbsp Grape Seed Oil

Direction:
1.sautee the onion with the olive oil and add the chicken and the spices for about 5 minutes
2. add water to cover the chicken, bring to a boil, then cook on medium heat for 30 min
3. debone and shred the chicken and the save the broth water
4. in a clean pot add the veggies with 1/2 cup of the broth water, bring to a boil, then cook on medium heat for 10-15 min or until tender
5. wash the rice in warm water then add to the veggies mix. add 1 cup of strained broth water (fromt he chicken you cooked), bring to a boil and let it cook on high heat fro 5 min or until all the water evaporates. Turn off the heat and cover with a towel for 10 min
6. In a small pan add teh grape seed oil and the almonds and sautee till they are golden brown
7. In a deep serving tray, place the rice, then cover with the shredded chicken, then the almonds.
8. serve with greek yogurt and enjoy;)

Benefits:
