Pasta Biryani

My Pasta Biryani is inspired by Indian cuisine. Rich in flavor, but low in calories. Enjoy a healthy meal with a boost of protein and probiotics.

Ingredients:
1/2 chicken breast cut in cubes
2 cups quinoa pasta cooked and strained
4 cups fat free greek yogurt
6 vine tomatoes peeled and cut in quarters
1 tbsp turmeric, 1 tsp cinnamon, 1 tsp black pepper, 1 tsp cardamon, 1 tsp salt, 1/2 tsp cumin, 1 tsp paprika, 1 tsp nutmeg(grated)
2 tbsp grape seed oil
1 onion cut in cubes

Directions:
1. In a medium size pan sauté the onions and the chicken with the oil and add all the spices until the chicken is cooked (10 min)
2. In a blender blend the yogurt and the tomatoes (you may need to do half the amount then do the rest so you don't over load your blender)
3.Pour the mixture over the chicken, bring to a boil and cook on low heat for 7 min
4. add the pasta and cook for 3 min
5. turn off the heat and serve hot
