Chicken Spinace

This is a twist on an arabic dish I used to enjoy as a little kid. It is perfect if you are in a hurry, but you want to fix something healthy.

Gluten Free, Dairy Free

Ingredients:
2.5lb Fresh Spinach (i get the costco bag, pre washed )
1/2 chicken cooked & shredded (I get the whole food rotisserie one)
1 bunch cilantro (chopped)
1 cup peppers (chopped)
1 lemon juiced
1 tsp hot pepper paste (optional)
1/e tsp salt. 1 tsp black pepper, 1 tsp paprika, 1/2 tsp cardamon

Directions:
1.Place the spinach in a deep pan on low heat and cover. let it wilt stirring occasionally
2. It will shrink in size when it's done
3. add the chicken, the spices, the paste, the lemon juice and 1/2 cup boiling water and let it cook for 5 min
4. add the cilantro and the peppers, turn off the heat
5. serve hot with a side of rice or quiona
