I am challenging myself to stick to a one week detox diet. I am not into calorie counting or loosing weight. I am more for a lean healthy looking body. One of the things I focus on during this food regimen is to eat tons of fruits and vegetables. I fixed this vegetarian soup the other day. Try it out, it will for sure help detoxify your body and add lots of glow to your skin.

Gluten Free, Vegetarian

Ingredients:
2 large tomatoes (diced)
1 cup diced mushrooms
1 cup chopped green onions
1 cup chopped laminate kale stems (use only the stems)
1 cup fresh corn
1/2 cup quinoa veggie curls pasta (found at Whole Foods)
4 cups chopped spinach
1/4 cup olive oil
1tbsp salt, 1 tsp black pepper

Directions:
1.In a small pan add the tomatoes with 1 cup of water and bring to a boil. Cook for 10 minutes
2. add the kale stems, the pasta, the spices, and the corn. Cook for 8 minutes
3. add the spinach, bring to a boil and directly tun off the heat
4. add the olive oil
