Lentil Nado

Lentils are rich in flavor that they can make delicious recipes on their own. One example is this crushed red lentil soup. Try it and be the judge. A typical middle eastern soup that is served primarily in Ramadan (the fasting month) for its nutritional values.

Ingredients:
1 cup red lentil
1 large onion or 4 shallots (chopped)
1/4 cup olive oil
1 lemon juiced
1 tsp salt, 1 tsp black pepper, 2 tsp cumin

Directions:
1. wash the lentils under running water in a strainer
2. in a medium size pan place the lentil and cover generously with hot water
3. bring to a boil, add the spices then cook on medium heat till the lentils are mixed well with the water (about 20 min)
4.in another pan place the oil and the onions. Saute the onions on high heat until golden
5. pour the onions with the oil over the soup and turn off the heat
6. add the lemon juice, and serve hot
