Fava Lava Salad

This is a traditional Syrian dish. Packed with vitamins and nutrition, My fave bean salad makes a full meal by itself. For my vegan friends out there, you are going to love it.

Ingredients:
400g frozen fava beans
2 cups colored peppers (finely chopped)
4 garlic cloves (minced)
1 lemon (juiced)
1 tbsp lemon zest
1 bunch cilantro (chopped)
4 tbsp olive oil
2 tbsp cumin, 1 tsp cardamon, 1 tsp himalayan salt
1/2" fresh numeric root (remove before serving)

Directions:
1.In a medium size pan add half the olive oil and all the fave beans with the spices and sauté for 5 min
2.cover with water and bring to a boil
3. add the garlic, the tumeric, and cook on medium heat till the beans are tender
4. add the cilantro and turn off the heat
5. place in a serving plate (take out the numeric root) and refrigerate at least for two hours before serving

Did you know that fave beans are dense with nutrition? They are a great source of protein and fiber. They are also rich in thiamin, vitamin K, vitamin B6, potassium, copper, magnesium. They make a great vegan super food.
