Beet Me Sprouts

As we approach September, I introduce you to my fall inspired beet salad. It doesn't only have beautiful colors, but is full with antioxidants for a glowing skin and a fit body.Easy to make, delicious, and extremely hydrating and refreshing.
Gluten Free, Dairy Free, Vegan
Ingredients:
2 fresh beets (boiled until slightly tender and peeled)
1 cup chopped alfalfa sprouts
1/4 cup chopped parsley
1/2 cup shredded almonds
1/2 lemon juiced
1 tsp dijon mustard
1 tsp salt
4 tbsp olive oil
Directions:
1. Cut the beets into small cubes and mix with the sprouts, parsley, and almonds
2. In a separate bowl mix the mustard, the oil, and lemon, and the salt
3. Pour the dressing over the beet mixture and toss lightly
