Spruce Eggplant

Super easy to make and perfect for the hot summer days. It is so refreshing and super healthy at the same time. The inspiration behind my eggplant salad is mediterranean. It's the perfect dish for all the vegans out there

Ingredients:
2 Eggplants
1/2 cup chopped fresh color peppers
1/2 cup chopped parsley
1/2 cup diced tomatoes
2 garlic clovers minced (optional)
1 tsp himalayan salt
1/2 tsp ground cardamon
1 lemon juiced
4 tbsp olive oil

Directions:
1.Preheat oven to 350 and bake the whole eggplants skin on until tender (10-15 min)
2.Take them out and let them cool before you peel the skin out (it should be super easy to do so when they are cooked)
3. Cut the eggplants into small cubes and add the cardamon and the salt, the lemon, the garlic, the olive oil and mix well
4. Add the tomatoes, the parsley, and the peppers and mix well
5. Serve cold
