Yocumber yogurt

My mom makes the best yogurt salad out there. It's so good that since I was a little kid I wanted my yogurt salad with everything. Five years ago I've become lactose intolerant which made me cut milk all together. Yogurt has been the alternative. Rich in probiotics and calcium makes yogurt hard to abandon.

I couldn't find a better gift for all the wonderful mamas out there than sharing my Yocumber recipe I learned from my mom. Happy Mother's Day everyone..

Ingredients:
24oz Greek Yogurt (i get the non fat one)
8 snack cucumbers (the small ones found at costco, or substitute for 2 large ones)
1 tbsp dried mint minced
1 tsp salt (optional)

Directions:
place the yogurt in a medium size bowl and add the salt. Mix well
dice the cucumbers and add to the yogurt. Mix well
add the mint and mix well
garnish with fresh leaves of mint
refrigerate and serve cold alone or with a side of quinoa, rice, meat, or my Meaty Mushrooms recipe
