Kalelooli Salad

Kalelooli is my new healthy vitamin packed invention I am so excited to share with you. It is simply a tabbooli (the famous middle eastern parsley salad) with a twist. Kale is my key ingredient here. I am also getting rid of the wheat to make it gluten free. Kalelooli makes a full nutritious meal that is really addictive. Whoever thinks healthy meals cannot be delicious, I dare you to try this recipe and let me know what you think.

Ingredients:
1 large bunch Lacinato Kale (peel and finely chop the leaves only, keep the stems for future recipes)
1 small bunch curly parsley (finely chopped)
1 bunch green onions (finely chopped)
4 leaves romaine lettuce (finely chopped)
1 large tomato (finely chopped)
1 tsp dried mint
3 tbsp shelled hemp seed (found at whole foods )
1 tsp fresh black pepper
1 tsp salt
1 lemon (juiced)
5 tbsp olive oil

Directions:
Mix the kale, the parsley, the onions, the lettuce well
add the hemp seed and mix again
add the spices, the lemon, the olive oil and mix well
add the tomatoes and mix gently
