Soyno Stir Fry

I love Chinese food, but I can barely open my eyes following an oriental meal because of the large amount of sodium in soy. I came up with my own stir-fry recipe that is healthy, guilt free, and easy to make.

Ingredients:
1/2 lb skinless boneless chicken breast (cut into thin slices)
1 package ready to make fresh stir fry mix of your choice (found at the fresh produce section of all supermarkets)
1 tbsp sesame oil
1 tbsp amaranth flour
2 tbsp white vinegar
1 tbsp balsamic vinegar
1/2 cup olive oil
1 large lemon juiced
1 tsp black pepper
1 tsp curry sauce
1 tsp cinnamon
1 tsp cardemon
1 tsp paprika
1 tsp cumin
1 tsp salt
1 handful of shredded raw almonds
spray on grape seed oil

Directions:
1. spray an oven pan lightly with the grape seed oil, place the stir fry package and spray lightly again
2. preheat the oven to 400 and bake the vegetables for 15 min
3. broil them for 5 min
4. to marinade the chicken: add the oils, the lemon, the flour, and all the spices. Mix well
5. add the chicken to the marinade, mix well and refrigerate for 2 hours at least
6. in a medium size skillet place the chicken with the marinade and cook on high heat uncovered for 15 minutes.
7. add the baked stir fry mix and the almonds and cook for 3 minutes
8.serve hot with a side of white rice

You are getting all the benefits of the vegetables as they won't get overcooked. No preservatives, no soy, and really a low on sodium dish.
