IL Fare L’amore

When Eggplant and Zucchini meet, you get Il Fare L'amore. It's spicy, It's crunchy, it's colorful and it is super healthy. It is not that quick to make, but every bite makes it worth your time

Ingredients:
1/2 chicken roasted (you can buy it from Whole Foods or any Supermarket) (pick the spices you like)
1 large eggplant (cut into thin slices about 2" and 1/4" thick of any shape you want)
4 green zucchini (cut into 1/4" slices)
1 jar diced tomatoes
1 large onion (cut into small cubes)
1 bunch cilantro (chopped)
1tbsp himalayan salt
spray on grape seed oil
3 tbsp hot pepper paste (you can substitute with mild if you don't like spicy)

Directions:
1. De-bone, de-skin, and shred the chicken. Put aside
2.Toss the eggplant in a little bit of salt and let it sit on paper towels for an hour to drain the water out of it so it won't stick
3. Do the same for the zucchini
4. Spray two oven trays with the grape seed oil and place the eggplant on one and the zucchini on the other
5. Spray both trays again with the oil
6. Preheat the oven to 400 and bake separately for about 15 minutes or until they darken
7. Broil on high for 5 minutes and set aside
8. In a medium deep pan add 2 tbsp of grape seed oil along with the onions, the hot pepper paste, and half the cilantro
9. Sautee for 5 minutes
10. Add the tomatoes and the chicken, cook on medium heat for 5 minutes
11. Add the eggplant, the zucchini, and the reminder of the cilantro and cook on medium heat for another 5 minutes
12. Serve hot with a side of white rice
