Bootylicious Potato

Who ever invented the air fryer is really smart. Before air fryers, fried and healthy could not be seen together. If you want the healthy version of this recipe, then for sure get an air fryer:)

Vegan, Dairy Free, Gluten Free

Ingredients:
1 Large Eggplant cut into 1/2" cubes
1 Large potato cut into 1/2" cubes
1/2 cup cooked chickpeas
1 tomato
1 lemon juiced
1 tbsp sesame oil
2 tsp himalayan salt
1/2 tsp cardamon, 1/2 tsp cumin, 1/2 tsp coriander, 1/2 tsp paprika
1 bunch cilantro chopped
3 tbsp Greep seed oil
1 tbsp olive oil

Directions:
1. Place the eggplants with 1/2 the salt in a strainer for a couple of hours to get out excess water
2. soak the potatoes in water for 30 min, then pat dry and stir in 1 tbsp grape seed oil
3. Preheat the air fryer to 360 and place the potatoes for 15 min or until crunchy, set aside to cool down
4.Add 2 tbsp grape seed oil to the eggplants and fry the same way you did for the potatoes.
5. In a blender mix the tomatoes, the spices, the sesame oil, the olive oil, the spices
6. In a medium size bowl mix the eggplants, the potatoes, and the chickpeas
7. Pour the sauce you created in the blender over the mixture and garnish with cilantro.
8. Refrigerate for 2 hours before serving
