Exotic Salad

I love this salad in the spring and summer months. It is colorful, refreshing, exotic, crispy, and super rich in antioxidants.

Ingredients
1 cup diced colorful peppers ( I find them already diced at Meiier and Papa Joe next to the fresh salads)
1 cup finely chopped fresh white mushrooms
1/2 cup chopped fresh radish
1/2 cup fresh diced tomatoes
1/2 cup diced black olives
1 cup chopped red cabbage
1 cup corn
1 head broccoli (just finely shave the dark green florets)

The dressing:
4 tbsp balsamic vinegar
1 lime juiced
1/4 cup fresh oregano
1 tsp salt
3 tbsp olive oil

Directions:
In a medium size bowl mix all the vegetables
mix the dressing and add to the salad
serve cold

Benefits: rich in antioxidants, vitamins, fiber. Great for a lean body and a glowing skin :)
